Don't let the easiness of the recipe fool you. It tastes and looks incredible. It is really, the best apple pie I have ever eaten.
Ingredients: 2 premade refrigerated pie crust (Approx.) 3 Tbs fresh lemon juice (Approx,to taste) 2 Tbs cinnamon (Approx.,to taste) 1 tsp nutmeg 1/2 cup unsalted butter 3 tablespoons all-purpose flour 1/4 cup water 1/2 cup white sugar 1/2 cup packed brown sugar 8 apples - peeled, cored and sliced Directions: 1. Preheat oven to 425 degrees. Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer until small bubbles form at top and it looks caramel like. Stirring occasionaly. 2.Toss sliced apples with 3 Tbs of lemon juice(to keep from turning brown). Then toss with 2 Tbs of cinnamon and 1 tsp of nutmeg. 3. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. 4. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees. Continue baking for 35 to 45 minutes, until apples are soft. Notes: I like to use gala apples. I put a cookie sheet under the pie pan in the oven. It likes to bubble over while it's cooking. Today I am grateful for the visiting teaching program our church has. Also, for the awesome people I go to church with. I love how everybody takes care of everyone. Today I was out running some errands. While I was gone, my visiting teachers stopped by and left a box with goodies in it. The goodies were: Beef Enchiladas, Mexican rice, Salad, and a yummy looking cheescake. What a great surprise to come home to! Now I won't have to cook tonight. I can spend my time packing. The lady who made the enchiladas is one of the best cooks in our ward. I can't wait to eat them! And the cheesecake! I'll have to do some extra sit ups tonight.

I stole the idea for this post from booklogged (Ben's Aunt). I love to hear about other peoples holiday traditions, so I thought I'd post some holiday Q & A's.
1. Egg Nog or Hot Chocolate? Definetly Hot Chocolate. Egg Nog is gross. 2. Does Santa wrap presents or just sit them under the tree? Usually wrapped, ocasionally if it's a really big present ,it won't be wrapped. 3. Colored lights on tree/house or white? Colored. White is so boring. I love festive trees. 4. Do you hang mistletoe? Nope. Never have. 5. When do you put your decorations up? Usually the first half of December. For some reason, it always takes me forever to actually do it. 6. What is your favorite holiday dish (excluding dessert)? My mom's stuffing. It is really good. It has sausage in it. Ben deosn't like sausage ,so I don't usually eat it. 7. Favorite Holiday memory as a child? Every Christmas we usually had a big breakfast. Most of the time we would run to 7 eleven on Christmas morning and grab whatever we needed to fix breakfast. Also, I always loved decorating the tree as a kid. Even though I'm pretty sure my Mom would come and rearrange everything after the kids did it. One more was, at some point my dad started changing the names on the presents to the names of the three stooges so we couldn't figure out whose presents were whose. (There were 3 kids in my family.) We would try and figure out which stooge we were. Very amusing in a "I'm going to torture my kid's" way. 8. When and how did you learn the truth about Santa? Not sure. I think I just figured it out at some point. 9. Do you open a gift on Christmas Eve? Yes. As a kid we always opened one. Usually one from an aunt, uncle, or grandparent. Now, with my kids ,they open pajamas on Christmas Eve. 10. How do you decorate your Christmas Tree? We use colored lights and all the ornaments I've collected over the past 10 years. I don't do really fancy trees. A lot of my ornaments have a country-ish feel. 11. Snow! Love it or Dread it? I like nice fluffy snow. I hate the slushy nasty snow. 12. Can you ice skate? Never been ice skating. I do like to roller blade, which I hear is similar. 13. Do you remember your favorite gift? Hmmm. As a kid it probablly would have been my first hamster. My parents actually wrapped the cage with the hamster in it. On Christmas morning I could hear faint scratching noises as I waited my turn to open it. As an adult, probablly the book Ben gave me last year. He tried so hard to remember a book I had pointed out to him at Borders, and totally bought the wrong book. When he gave it to me I had no idea why he had bought this book. When he realized it was the wrong book, it was pretty amusing. 14. What’s the most important thing about the Holidays for you? Being with family is a biggy. Feeling the Chritmas spirit and remembering why we celebrate Christmas. Also, watching my kids on Christmas morning is awesome. 15. What is your favorite Holiday Dessert? Apple Pie. The kind I make. I found the recipe online a few years ago, and it is THE BEST APPLE PIE EVER! Nicole will agree with me, she makes it too. Pumpkin pie is good too. 16. What tops your tree? I think it's a silver star. I've been meaning to replace it, but I can't remember if I ever did. 17.Which do you prefer giving or receiving? That's tough. They are pretty equal. I like giving, if it's something I've thought about, and if it's something unique. I always like receiving! 18. What is your favorite Christmas Song? What Child is This. 19. Candy Canes! Yuck or Yum?? Totally Yuck! I am not a fan. My kids don't like them either. For some reason I stiil hang them on my tree every Christmas Eve when the kids go to sleep. Monday, November 13. 2006
We have a contract on our house! I can't believe it. I feel relieved and sick at the same time. Now the packing begins. We have about 2 weeks. I should have just packed up all the books when I had them in a big pile on the floor. It seems like I am finally waking up from a long nightmare. Thanks for all the prayers. Hopefully we don't run into any trouble between now and settlement. Here we go!!!!!!

Today I have been watching the daughter of a lady in my church who just had a baby. Her name is Zoe. She is four. Her and Claire get along really well.
I've had Zoe since 9 this morning and haven't had any problem with her or Claire. About 30 minutes ago, I came downstairs. Claire and Zoe had taken most of my books off the bookshelf and thrown them in a huge pile. For those of you who haven't been in my living room and seen our bookshelf, there are a good amount of books on it. All of the books had been organized and displayed just the way I wanted them. Kids books had their shelves. Classics, Alice in Wonderland has two shelves, biographies, art books, Salinger etc.... When I saw the huge pile of books, I almost cried. Luckily, nothing got ripped or messed up. It took me about 45 minutes to get everything back on the shelves. I'll probablly be moving books around for the next week. I'm pretty sure it took the girls 5 minutes to make the mess. I asked Claire why they did it. She said they were looking for my phone. They wanted to call people to tell them to come save them from a monster. Needless to say, Claire is grounded from watching tv today. Wednesday, November 8. 2006
Wednesday was day 45 of my exercise program. That means I am half way through the 90 days! It's a miracle! I have never been this consistent with exercising. Only 45 more days to go. I didn't think I would make it this far. I'm worried with the holidays and flu season coming up. I'm scared if I miss a day, all my work will be for nothing. If I can just make it through Christmas, I think I may be able to keep it up.
